But if you've ever done any of this 5 "No-No's" then you probably weren't able to fully enjoy all of its great qualities.
Here are 5 things you should avoid doing with grassfed beef:
1. **Overcooking:** Grassfed beef has less saturated fat than conventionally raised beef, making it leaner. Overcooking can result in a tougher and drier texture.
Aim for medium-rare to preserve the tenderness and juiciness of the meat. If you prefer well done meat you may want to explore different cooking methods that retain moisture, like braising or slow cooking.
2. **Skipping the Resting Period:** Make sure you let steaks or baked roasts rest after cooking.
This gives the juices within the meat a chance to redistribute, ensuring a more flavorful and moist bite. For steaks, 5 minutes is key (resist the urge to cut in right away and sample it). For larger roasts 10-15 minutes is good.
3. **Using Excessive Marinades:** While marinating can enhance flavors, avoid overpowering the natural taste of grassfed beef. The beef itself has a distinct and delicious flavor, so opt for simple marinades that complement rather than mask the taste.
WE DO NOT RECOMMEND MARINATING our Premium cuts like Tenderloin, Ribeye, NY Strip, and Flatiron. Salt, Pepper, and Garlic Powder is all you need!
For the lesser quality steaks (Chuckeye, flank, skirt, tritip, Denver, Round) definitely marinate them--opting for things like garlic, lemon or lime, or ginger to help tenderize the meat.
4. **Cooking at Too High Temperatures:** Grassfed beef cooks faster than grain-fed beef due to its lower fat content. Using excessively high temperatures can result in uneven cooking. We like to grill our steaks at about 400 and cook roasts at 325.
5. **Not Letting it get to Room Temp:** Cooking a steak when it's fridge cold can be done in a pinch but, if you want the best eating experience, pull your meat out of the fridge for 1-2 hours before cooking so it can get to room temp.
This will help get a good sear on your meat when you grill, fry, or roast it...which keeps the juices in it.
