Beets are one of those "superfoods" that may or may not make an appearance in your diet.
If you're like me, then the PROCESS of making beets is what keeps them out of
your diet.
They take too long and they're too messy.
Artichockes would go in this category also...
I LOVE THEM, BUT, I can never plan ahead so that I have a whole hour to cook those babies to perfection.
I was guilty of just letting beets and artichokes go bad in my fridge...

Artichokes, beets, AND baked potatoes all at the same time and done in about 30 minutes????I know I am the beef lady...but meals need to be balanced so hopefully I can help you with tips for making ALL of dinner great...not just the meat!
The Instant Pot is once again the star of the show here.
I cook artichokes, beets, and potatoes all at the same time, for 15 minutes on high in the Instant Pot.
They all steam perfectly and we reap the benefits of healthy and delicious sides to pair with steak or a roast.
As long as you have a TRIVET or another stainless steel bowl to help separate the contents then it will turn out great.
I learned the hard way the first time and we ate purple mashed potatoes (beets are VERY colorful and bleed!)Here's how I cook this simple trifecta of sides:
1. Trim beet greens to 1 inch long. Rinse beets and place at the bottom of the pot.
2. Put the trivet on top of them and place artichokes in (cut the tips and stems off to help facilitate steaming).
3. Wash potatoes and place them on top of the trivet, or inside a small stainless steel bowl to keep them separate.
4. Add 1.5 cups of water
4. Cook on HIGH for 15 minutes and allow for a 10 min natural release.
The artichokes come out steamed perfectly, the potatoes are ready to load with butter and sour cream (hello easy baked potatoes) and the beets just have to be peeled and sliced for a healthy side.
